Ingredients:
• 150 ml butter
• 2 small onions, finely chopped
• 125 ml (½ cup) cake flour
• 500 ml (2 cups) Nestlé Ideal Low Fat Evaporated Milk
• 250 ml (1 cup) Nestlé Dessert Cream
• 250 ml (1 cup) water
• 500 g smoked salmon, cut into strips
• 160 ml (⅔ cup) chopped chives
• Salt and freshly ground black pepper
• 3 packets (500 g each) tagliatelle, cooked
• Fresh Parmesan cheese, grated
• Pan-fried fresh salmon (optional)
Method:
- Melt the butter and stir-fry the onions until soft. Add the flour and mix well.
- Add the evaporated milk, cream and water. Stir until the sauce thickens and bring it to the boil.
- Add most of the salmon strips and the chives and season with salt and pepper.
- Toss the pasta with the sauce and scatter over the remaining salmon strips and the Parmesan cheese.
- Top each serving with a piece of pan-fried salmon (if using) and serve immediately.
